 How to make Kome(rice) koji(malt)?

Kome koji is made from steamed rice with koji mold added to it.

Most of Japanese traditional food or  ingredients including sake, mirin(cooking sake) and miso are using fermented Kome Koji.

Sake lees are made by adding yeast into fermented Kome Koji.

 Which amazake is better?

Controversy often arises as to which is healthier, rice malt amazake or sake kasu amazake.

These two, however, have their own unique health and nutritional benefits, and to be honest, it is very difficult to compare them.

For example, sake lees amazake, which contains "instant protein," an ingredient that expels oil, is said to be good for weight loss.

However, rice malt amazake contains more biotin contained in "koji mold" than sake lees amazake, which is also said to be very effective against rough skin and dull skin.

Although the ingredients are different, they have similar effects, and each has its own unique effects, so it is difficult to say that this amazake is better! It is not possible to say that one amazake is better than the other.
